Black Hearts and Sparrows in Melbourne had some words to say about this one -

"Young winemaker, Sam Leyshon’s intriguing approach to Sauvignon Blanc may be unconventional yet sure is exciting. Toeing a wonderful line between oxidative and skin contact characteristics, there’s an aspect to the varietal that is positively unique.

Handpicked and de-stemmed before an extended five day cold soak on skins, the juice was then pressed into old oak to start a wild ferment which lasted 11 days. Regular lees stirring over eight months preceded a light dose of sulfur dioxide at bottling to craft a savoury, nutty and saline-edged wine. There’s plenty of zesty citrus pushing through to the structural core and more textural grip than you’d expect given the length of maceration but it evidently works. In a word: yum."

This small batch was a hit and sold out really quickly. We have a 2017 release on the way and expect similar things. Keep an eye on it!
