2011 Cabernet Sauvignon

The 2011 vintage was a very difficult one, with over 1,000mm of rain for the year in an area where the long term average is around 600mm.  The wet season restricted access to the vineyard and added to the disease pressure.  It also lengthened the ripening period.  The fruit was picked on 19 April in surprisingly sound condition, at 13.7 Be, a pH of 4.42 and TA of 8.32.  It was crushed and fermented at 25-30 C then left for another week before pressing on 30 April.  After malolactic fermentation it was racked into French oak barriques where it spent the next 18 months.  It was then moved into barrier bags to develop without the influence of oak and bottled in January 2014.

The result is an elegantly restrained wine, very much in the classic Bordeaux style.  It has a typical cool climate Cabernet nose of mint and bright fruits.  These follow onto the palate with hints of chocolate and cedar.  It has a fine dusty finish with smooth oak tannins.  It is drinking beautifully now, and will continue to develop in the bottle for years to come.
